It's a different cut of meat

And it is cured differently. We call it back bacon out on the left coast. The cut of meat is from the loin, in the back and has almost no fat. Regular bacon is from the belly and is very fatty. Yes, there is a difference. Canadian bacon is not simply a big ham steak. Back bacon comes from a much smaller cut of pork. The outside is often coated in cornmeal. /I'm Canadian //So take off eh!! ///Hosers........

Canadian bacon isn't the same thing as ham. So far as I know hams are just pig legs. Canadian bacon, on the other hand, comes from the loin (along the back). Here in Canada "Canadian bacon" is not an especially helpful term
