thinly sliced. your favorite spices for jerkey in a somewhat salty liquid and marinade for 12-24 hours. to dry: 1 box fan 3 furnace filters that match the size of your box fan 2 bungehee cords lay the meat in the grooves of a filter do not over crowd. cover with the next filter in the same direction, add more meat then put the last filter on top. attach the filters to the box fan in the correct dirrection for the airflow arrow on the filters. turn your fan on let it go for a minimum of 12 hours. rotate the layers of the filters and continue to dry with the fan. very good and makes the house/appartment smell great.

If you have the time and motivation, a smoker is great. You'll get the best flavor that way. Of course, paper bags in an oven at a low temperature works as well.

you beat a chunk of meat put all the herbs on it then go to new york and have a cab driver sit on it all day..then the flavor is magnifique.=))
