Where do you draw the line between livestock and pets?

Livestock (stock as in inventory) is a business derived with that animals help/products, while pet is companion - they can be both livestock and pet, or neither, i.e. wild.

Being a picky eater, I aim for the organic meat that I know didn't come from a slaughterhouse in some backwards columbian warzone. But, I think all animals should be treated well. If you're going to eat it and not raise it for companionship, then I would say that is livestock. Something like a dog you breed could be considered both as it is used for profit and a companion (potentially). Not saying that Bessie, your dairy cow isn't a good friend too, but chances are you don't let her sleep at the foot of your bed at night and feed her leftovers under the dinner table.

The best answer I can think of is that livestock gets eaten. Pets don't. Unless, things get desperate. The evolution of animal husbandry is that some animals were useful for their meats, furs, and milk. These were livestock. Other animals became useful for defending against attacking humans, wild animals, or for policing vermin. These animals lived symbiotically with us, and became companions. Ergo, pets.
What kind of animal could be considered a pet or livestock is a different matter. In Western cultures, eating a dog or cat is considered distasteful, and would normally only be done when faced with starvation. In some Asian cultures, dogs and cats prepared by different methods (some being arguably inhumane) are considered delicacies. Likewise, even in western cultures some animals which are normally considered livestock, such as Vietnames Pot Bellied Pigs are sometimes taken as pets.
